Belizean Stewed Chicken (Serve with Fry Jacks)
Cut up a whole stewing chicken (head, feet, and all!) and sear it in a pot with some oil. Remove the chicken and add 1 chopped onion and 2 chopped red bell peppers. Saute for 5 minutes on med-high. Stir in 2 T of recado, or achiote paste, and saute for 2 more minutes. Add 2 c. of stock and the seared chicken (head, feet, and all!) back to the pot and bring to boil. Simmer, covered, for 3 hours.
