Pollo Al Ajillo
I love it when I don't have to cook. Really, it's nice to have a day off and have someone do it for you. When I got home Andrew was well into this Pollo al Ajillo (aka chicken and garlic and wine), a Spanish dish he grew up with. I was dewy from the California mist and hungry.
It is magnificent what a couple of ingredients can do for you. What a bottle of wine and some good olive oil can do for a ravishing tummy. He served it over papitas, or small cubed french fries.
I don't want to steal his thunder. I'll let him tell you himself.

Recap: *Brown 4 lbs of salted, bone-in, skin-on chicken (dredged in flour) in a hot pan with oil until golden. *Drain oil and add 1/2 bottle of wine, a kiss of sherry, lemon rind, 2 bay leaves and boil until the alcohol has been cooked off, 7 minutes. *Add 1 cup chicken broth. * Bring to boil, cover, reduce to simmer - simmer 1 hour.Enjoy with bread and french fries.
Your boyfriend/husband cooks for you? I am so jealous. Mine made minestrone once for me from a recipe he found online and I guided him most of the way. Very thoughtful, but I would kill to come home to some Pollo Al Ajillo!
