Zuni Duck Stock

This is a variation of the Zuni Chicken Broth. Please read the full post for more instruction.

DUCK STOCK (2 quarts) Total time 5 hours, Active time 30 minutes

- 1 duck carcass with neck, skin, fat and wings
- 1 leek, sliced in half
- 1 onion, halved
- 1 carrot, chopped in a couple pieces
- 1 parsnip, chopped in a couple pieces
- 2 cloves
- 1.5 t salt
Cram the duck parts into the bottom of a wide saucepan. Cover with cold water (8 cups) and bring to a boil. Skim foam.

Cram the vegis, salt, and spices into the pot and bring to a boil. Turn down to a minimized simmer. Barely simmer. And allow to cook for 4 hours. Do not boil, do not touch, do not cover.

At the end of 4 hours the broth will have developed.
