Anyway, answering your question about brioche with cheese, I think I'm going to try to make it first, then I can give you the advice. I never seen the recipe in the book though, I must look again.
Actually I made bread similar to brioche, and it has cheese(quark) in it. You won't really taste the cheese. So, I guess this one won't work. I'll post the recipe next month. Cheers, Elra
